Finding outlets for rabbit meat is probably the biggest challenge in raising rabbits.
Depending on the breed(s) you select, you may be able to sell some pet rabbits, breeding stock, or show rabbits.
The best option is to sell your rabbits to a processing plant who slaughters and distributes the carcass to various markets - meat to the restaurants; blood, brain and eyes to the medical field; etc. That is if you are fortunate enough to live near one.
You could also check with your local butcher shops - some like to carry unique meat such as rabbit, unless they require the meat to be processed under USDA inspection (even though rabbits are not required to be USDA inspected). I have not found a USDA inspected rabbit processor in the state of Ohio.
